What are the benefits of eating organic food?

I’ve been thinking of switching to eating organic because everyone says how healthy it is. But really, what’s so healthy about it? When you look at the back of labels of a lot of organic food, there’s so much fat, sugar, and sodium… which is NOT healthy.
So what is it? What’s so healthy or great about organic foods?

My husband and I are trying to switch to an organic diet as well as trying to stay away from high glycemic index foods. Does anyone know of a good book that contains unbiased information on both of these topics?

Has anyone else noticed?
I can’t order a salad with fat-free dressing without my friends sitting there, trying to tell me I shouldn’t be dieting. Maybe I don’t want to order the hamburger with french fries that isn’t good for my body, has probably 1000+ calories, and has almost no nutritional value.
The organic food aisles in grocery stores are almost always empty, while you are in TRAFFIC-like situations in the bulk food section.
The only healthy meal items are always named “fat free”, “low calorie”, and “low carb.”
Are there any other things you’ve noticed?

I have read up on organic and know it is really really healthy considering there are no chemicals used on the food. My parents are not all for it. Any suggestions?

The more I read about the chemicals and hormones “added” to foods the more I want to walk away from them. But like anything, change is hard. Did you switch your family over to organic and no milk? Was is a challenge? What did your kids think (mine are 2 and 4). Currently, they do eat some processed foods like ravioli’s and mac and cheese. Any helpful info or websites about changing ways of eating would be appreciated.

And I mean healthy eating not organic sweets and sugar, but 8-9 fruits/veggies a day reasonable calorie intake, etc. Does the lack of preservatives really make a difference on metabolic rate? If so how much?
